Grande Cuisine suite comes out on top at Brown’s
The kitchen at Brown’s hotel in London’s Mayfair may be in the basement, but the equipment is top flight thanks to the newly installed Mareno suite from Grande Cuisine.
As part of a major kitchen overhaul undertaken by Gratte Brothers, Grande Cuisine was asked to supply a suite to replace the tired gas equipment which wasn’t conducive to an efficient workflow and was also making the environment extremely hot and uncomfortable for the brigade to work in.
Once the extract ventilation system had been replaced, walls had been moved, the uneven tiled flooring swapped for Altro non slip, and the dishwash area moved to create more storage, it was time for the Mareno Star 110 suite to take centre stage.
All electric, the suite has two single 4kw radiant hobs at the service end, along with a 400mm ribbed chrome frytop/griddle. Set above is a pedestal mounted overshelf with salamander grill. A single well pasta cooker, single well fryer, four zone induction hob, and pass- through service oven complete the new set up.
Kitting out a basement in a top five-star Mayfair hotel in Mayfair London had its challenges. All deliveries had to be made after 11pm and before 5am. With restricted access into the kitchen area, everything used had to be broken down into 800mm dimensions to fit into the lift and through existing doorways.
Brown’s management, not to mention Italian chef Heinz Beck, is certainly pleased with the result. “The Mareno suite was chosen because Heinz requested a pass-through oven among other things, and of course it is Italian which went down well,” explains Gratte Brothers Senior Account Manager, Mark Hazell. “There were also budget constraints and Mareno fitted the brief well. The kitchen is now well equipped to handle the demands of the brand-new casual dining menu of classic Italian dishes, and at the same time is a pleasant and comfortable space for Heinz and his team to work in.”
