Grande Cuisine in the clover at the Pig in Combe

Grande Cuisine recently supplied a new cook suite as part of the overall kitchen fit-out for the award-winning Pig at Combe at Honiton in Devon, part of The Pig Group of hotels. The Pig is described as a ‘restaurant with rooms.’

The hotel has 30 rooms and currently does 150 covers a day. The Pig at Combe offers informal dining in a stripped back oak panel dining room that is light and airy with views over parkland.

The menu is varied. Because it is close to the coast, fresh fish features heavily on the menu. Vegetables are sourced from the hotel’s own gardens. Meat and dairy produce are also produced locally.

There are also two private dining venues at the Folly and the Georgian Kitchen.

The variety on offer on the menu meant that the kitchen had to be versatile with easy to manage workflows.

Grande Cuisine supplied a bespoke Athanor peninsular cook suite with a mixture of modern and more traditional style cooking appliances. This included within the one piece top a 14kW multi-point multi-zone induction hobs, traditional style gas solid top, inset rabata-style charcoal grill, twin zone Plaque Athanor plaque/plancha cook plate.

Set below the top is one traditional style cast iron lined roasting oven and a set of 3x 1/1Gn hot holding drawers. Set above the suite is an overshelf which includes a CAPIC salamander grill to the service end of the suite.
